Mediterranean Carrot Salad

  1. Crush the garlic with a knife and peel, put with a pinch of salt in a mortar and crush into a gruel. Mix lemon juice and sugar in a small bowl, pour in olive oil, pepper, add dried basil and oregano and beat well. Then add the garlic paste.
  2. Chop the parsley leaves finely. Cut the olives in half. Place the carrots in a bowl, add the olives and parsley and pour over the dressing. Cover with cling film and refrigerate for 15 minutes.
  3. Mash the feta into small pieces with a fork and sprinkle on the salad before serving. Mix gently.
