Minced Meat Curry with Cashews

A regular curry with pieces of meat, poultry or fish is stewed for a long time so that the food is saturated with spices. In our recipe, everything happens pretty quickly, because minced meat is used in it, and it instantly absorbs the aromas.

  1. Peel and finely chop the garlic and ginger. If desired, free the chili pepper from the seeds, chop thinly.
  2. Heat 2 tablespoons in a wok. l. vegetable oil and fry the ginger, garlic and chili, 1 min. Add curry paste and sauté, stirring constantly, for 30 sec.
  3. Add the minced meat to the wok and continue to fry, breaking the lumps with a spatula, until the minced meat changes color.
  4. Pour in coconut milk, bring to a boil and reduce heat, cook for 5 minutes. Wait for the curry butter to rise to the top of the coconut milk.
  5. Add sugar, soy and fish sauce, pour in lime juice. Try the sauce: season with salt or add more lime juice if needed. Cook for 3 minutes. and remove from heat. Add cashews and stir. Sprinkle the curry with chopped cilantro.
  6. Boil rice noodles according to package directions or cook rice. Serve curry with rice noodles or crumbly rice.
