Mini Pizza with Tomatoes and Mozzarella

This is a classic pizza: with mozzarella, tomatoes and olives. Everything is familiar, loved and popular. For a change, we will prepare a mini version of pizza.

  1. For the dough: combine flour, yeast, sugar, salt and about 250 ml of warm water and knead into the dough. Cover and place in a warm, draft-free place for 1 hour. Then knead, knead again and leave to rise again for another 30-40 minutes.
  2. Line a baking sheet with baking paper. Sprinkle the dough with flour and divide into 16 parts. Roll each piece into a ball. Roll out the balls with a rolling pin to a thickness of 3-5 mm and place on a baking sheet.
  3. Lightly crush the dough with your hands, making the edges slightly thicker than the middle. Brush the pizza base with a little sour cream and season with salt and pepper.
  4. For the filling: Cut the tomatoes into slices and spread over the entire surface of the pizzas. Scatter mozzarella pieces and chopped olives on top. Add a couple of tablespoons of pesto and drizzle with olive oil. Bake the pizza in an oven preheated to 200 ° C for 8-12 minutes, it should turn golden. Garnish with basil.
