Usually smoked hot peppers are added to a traditional South American mole. In our recipe, it is replaced with smoked paprika, but you can buy pepper, soak it for several hours, chop it and add it to the sauce along with dried apricots. Chocolate is also needed here not for sweetness, but as a spice.

  1. Cut the rabbit into portions. Rub with salt and pepper and fry in olive oil until crisp. Pour orange juice, white wine and 150 ml water, bring to a boil, cover and simmer over low heat for about 1 hour 15 minutes.
  2. Cut dried apricots into 1 cm cubes. Chop the onion, chili and garlic, fry in a deep saucepan in olive oil, 5 minutes, add dried apricots, cumin, coriander and cinnamon, pour 1 cup of warm water, bring to a boil and cook until soft dried apricots , 15 minutes.
  3. Place the pieces of rabbit on a plate, pour the liquid from the rabbit into the onion mixture, salt, pepper and cook without a lid for 15 minutes.
  4. Remove from heat, add grated chocolate, smoked paprika and butter. Return the rabbit to the sauce, heat, and serve immediately.
