Ingredients

Directions

  1. Prepare all ingredients. Cream is suitable for fat content from 30%. I used 40% fat cream. Buy good quality butter with a fat content of 72% or more. For the glaze, I used dark chocolate with 56% cocoa content. Take instant gelatin. I used cottage cheese with a fat content of 9%. Sour cream is suitable with a fat content of 10-25%.
  2. Crumble shortbread cookies into small crumbs. I made this in a blender.
  3. Melt the butter in the microwave. Add to cookie crumbs.
  4. For molding the cake, I used a split ring without a bottom. I set the diameter to 19 cm. I took a flat dish of a suitable diameter. Lined the bottom with parchment paper. Installed the ring. The side walls were lined with acetate film.
  5. Put the butter crumb into the prepared form. Tamp well and make small bumpers. Send to the refrigerator for 30 minutes.
  6. Gelatin pour 100 ml of boiled water at room temperature. Stir. Leave for 10 minutes to swell.
  7. Add sour cream, boiled condensed milk, vanilla sugar to cottage cheese. Set aside 30 g of boiled condensed milk.
  8. Blend with an immersion blender until smooth.
  9. Melt the swollen gelatin over low heat, stirring constantly with a spatula. Do not bring to a boil so that the gelatin does not lose its gelling properties. Cool the gelatin mass a little, until warm. Pour into the curd mass and beat again with an immersion blender.
  10. Put the remaining condensed milk on the sand base and spread over the entire bottom.
  11. Peel the bananas, cut in half and lay on a layer of condensed milk.
  12. Pour in the curd mass. Place in the refrigerator to let the curd layer harden. It took me about 1 hour.
  13. Break the chocolate into pieces. Pour the cream into a saucepan and add the chocolate pieces. Warm over low heat or in a water bath until completely melted. Cool to room temperature.
  14. Pour the chocolate icing over the curd layer. Send to the refrigerator until completely solidified. It took me about 2 hours.
  15. Decorate the cake as you like. I garnished with almond flakes, banana slices and mint leaves. Mousse cake with boiled condensed milk, bananas and chocolate icing is ready.
