Muffin with Port and Prunes

For this cake, only such epithets as tart, juicy, rich, bright, chic, sophisticated and noble are suitable! The main ingredients are a great trinity: prunes, fortified wine (port or Cahors wine) and cinnamon, it is they who give the unique taste and aroma to this cake. You can't live without them! A special charm - of course, dark chocolate ganache!

  1. Turn on the oven immediately, it should warm up to 180 degrees. Cut the prunes into small pieces.
  2. Prunes should be 2 cups (250 ml). Pour the required amount of port.
  3. In a saucepan, pour over prunes with wine and put on fire. Let it boil and immediately remove the saucepan from the heat, cover and leave for half an hour.
  4. In a bowl, combine flour, salt, baking powder, sugar, cinnamon, vanilla sugar and orange zest.
  5. Pour the wine from the saucepan through a sieve. Save the wine, it will still come in handy.
  6. Add prunes to flour mixture and mix well.
  7. Mix the wine with butter, natural yoghurt and baking soda.
  8. Beat eggs lightly with a fork, pour into the wine mixture and stir with a whisk.
  9. Pour the wine mixture into a dry mixture and mix thoroughly.
  10. Grease a baking dish with refined vegetable oil and lay out the dough. I have a round non-stick shape with a diameter of 26 cm with a "hole". Put in a preheated oven, bake at 180 degrees until a dry match. It takes me 60 to 70 minutes.
  11. The baked goods are ready. Remove from the oven and leave to rest for 15-20 minutes. Then transfer the cake to the wire rack until it cools completely.
  12. Ganache is very easy to cook. Pour the cream into a saucepan, add the chocolate wedges, stir until the chocolate is melted. Using a brush, apply the ganache to the surface of the cooled cake.
  13. You can decorate the baked goods if you wish. I have orange peel on my muffin.
  14. A spicy muffin with a cut of port and prunes.
