  2. Next, bake 20 thin pancakes, the size of a dessert plate. Let them cool down a bit.
  3. And at this time, prepare the filling from cottage cheese, the remaining sugar, eggs, half the prescription volume of sour cream and juice of a lemon third. The finished mass should turn out to be thin - so that it can be "smeared" over pancakes.
  4. Spread pancakes with curd filling.
  5. Roll up rolls. And fry each roll on both sides in a small amount of oil (you can even vegetable oil).
  6. Lay ready-made pancakes on a beautiful dish in layers: the first two (5 pieces each) are laid out in whole rolls on top of each other - one straight, the other across it. The third - is already placed in rolls, cut into circles.
  7. Then the cream is mixed from the second half of sour cream and ricotta.
  8. And this cream smears the top of the cake - "turtle shell".
  9. And one pancake needs to be baked smaller than all the others in diameter. And leave it unfilled. A "muzzle" is formed from it, and "eyes of a sea turtle" are laid out with raisins. "Shell" on top can be slightly sprinkled with cocoa powder through a strainer. It turns out very nice!
