Peach curd pie is good because it can be cooked at any time of the year. We suggest using canned fruits in our recipe, but obviously fresh ones are fine too. Which is better? It's up to you to decide! True, in the case of fresh ones, you will most likely have to add more sugar to the filling, although this is a matter of taste. In any case, the peach curd pie will turn out delicious and tender. And also very aromatic - due to the fruits themselves, as well as the lemon peel. We strongly recommend using it: it blends harmoniously with the peach flavor and makes it more expressive.

Ingredients

Directions

  1. Make the peach curd dough. To do this, first sift the flour and baking powder through a fine sieve onto a work bench or into a large bowl.
  2. Cut the cold butter into cubes and add to the flour. Chop with a knife until fine crumbs are obtained. Pour in the cream, add half the zest. Knead the pie dough and refrigerate for 30 minutes.
  3. For the pie filling, separate the yolks from the whites. Whisk the yolks with the sugar, cottage cheese, leftover lemon zest, and cornstarch. Beat the whites separately into a strong foam and add portions to the curd mass.
  4. Place the chilled curd dough between two sheets of baking paper and roll it into a thin cake with a rolling pin. Place it in a greased baking dish about 24 cm in diameter.
  5. Place the canned peaches on a sieve and let the syrup drain. Spread the curd filling over the dough cake in the form and smooth. Place canned peaches on top.
  6. Heat the oven to 200 ° C. Place the pan on the middle level and bake the curd cake for about 45 minutes. Let it cool slightly, transfer to a large plate and serve.
