This oven-baked apricot pie combines two ingredients in one dish that are incredibly harmonious. We are talking about almonds and directly about apricots. If you haven't combined them before, try it by all means and make sure that they are just made for each other! The dough with the addition of almonds turns out to be pleasantly moist and not too sweet, while apricots add a pleasant sourness and a unique aroma to baked goods. You can, of course, take canned fruits, but be sure to try using fresh seasonal ones at least once. With them, the apricot pie in the oven is much tastier!

  1. Prepare the ingredients for the apricot pie. Cut the butter into small cubes and leave at room temperature for 30 minutes to soften.
  2. Dip the almonds into a pot of boiling water and keep on the fire for 3 minutes. Then fold on a sieve and rinse several times with cold water. Peel.
  3. Place the almonds in a dry skillet in one layer. Put on low heat. Stir constantly with a spatula and dry the almonds. This will take about 5-10 minutes. Let cool, then chop in a blender.
  4. Make apricot pie dough. Beat butter with sugar. Add eggs and beat again. Combine almonds with flour, then with an egg-oil mass. Pour the resulting dough into a mold and flatten.
  5. Heat the oven to 190 ° C. Peel the apricots and place on the almond dough. Sprinkle with sugar and bake for about 40 minutes. Let cool until warm, transfer to a plate and serve.
