Incredibly delicious brass pies with potatoes and liver. The recipe is budgetary, this is its huge plus. We prepare a yeast dough based on kefir, without eggs, as a result, it turns out to be airy. We take chicken liver, potatoes and a minimum of spices as a filling.

  1. First of all, we will do the dough, prepare yeast, kefir, butter, flour, salt and sugar.
  2. Pour yeast into a clean glass plate, put sugar there, grind the mass, leave for 5-7 minutes, give the yeast time to come to life.
  3. Pour kefir, oil into a small saucepan, add salt, heat the mass to 37 degrees.
  4. The yeast "woke up", the mass should become a little liquid.
  5. Now pour in warm kefir with butter, mix.
  6. At the next stage, we introduce wheat flour (you may need a little more or less flour).
  7. We knead the soft dough, transfer it to a glass plate, which we pre-grease with vegetable oil.
  8. Cover the dough with a clean kitchen towel, put it in a warm place for 25-30 minutes.
  9. In the meantime, we will prepare everything for the filling - we take the finished liver, potatoes, salt, pepper, paprika, and an egg.
  10. Cook the liver in advance, simmer it with vegetables, then punch it on a blender until creamy.
  11. Boil potato tubers until tender, remove the peel.
  12. Crush the potatoes with a fork, add the finished tender liver, season the filling with salt, pepper, paprika.
  13. Mix well so that all the ingredients are combined.
  14. Do not forget about the dough, we take it out from under the towel, it has grown well in size and is ready to go.
  15. Tear off small balls from a large piece of dough.
  16. Put 1.5 teaspoons of the filling in the center of each blank, form a round pie.
  17. We grease the oven mold with vegetable oil, put the semi-finished product tightly to each other.
  18. Cover the cake pan with a towel and leave in a warm place for 25 minutes.
  19. Lubricate the blanks with a mixture of yolk and water, sprinkle with sesame seeds.
  20. In a hot oven, reduce the heat to 180 degrees, bake our pies for 20-25 minutes.
  21. Taking out the toasted pies from the oven, be sure to cover them with a warm towel, leave them in this state until they cool completely.
