Pizza with Baked Peppers and Speck

Aged dough and delicious filling ̶̵ what you need for a friendly evening! The recipe is for two round pizzas.

Ingredients

  1. For the sauce, place everything except the olive oil and garlic in a bowl and beat with a hand blender. Add oil and crushed garlic, stir and refrigerate for 12 hours.
  2. For the dough, mix yeast with flour with a whisk, gradually pour in water. Add salt about halfway through the batch. Knead to a smooth elastic dough. Make a bun out of the dough, place it in a bowl, cover with plastic wrap and leave at room temperature for 5-6 hours. After this time, divide the dough into two equal parts and roll up two balls. Refrigerate them for about 36 hours. Let the dough stand at room temperature for 3-4 hours before cooking.
  3. Wash the pepper, pat dry and oil. Preheat the grill in the oven and place the pepper under it, bake it until it is tanned on all sides, then place the pepper in a plastic bag and close. After 5-10 minutes, peel the peppers and seeds and cut into strips. Grate the mozzarella on a coarse grater, or cut into large julienne (preferred).
  4. For baking pizza, it is better to use a special pizza stone, it is easy to find on sale. Place a stone on a wire rack on the upper level of the oven, preheat the oven to a maximum for about an hour (if there is a convection function, turn it on). After an hour, turn on the grill, if any, stretch the dough with your hands, brush with sauce, add 2/3 of the mozzarella and put in the oven for 3-4 minutes. Remove the pizza and add the remaining ingredients (mazzarella, pepper, speck, sprinkle with parmesan) and put it back in the oven for 1-1.5 minutes.
