  1. Place the baking sheet on the middle level of the oven. Preheat oven to 220 C.
  2. Rinse the cauliflower, dry and cut into small pieces. Grind in a food processor to the size of a grain of rice. Place the cabbage on a cloth towel, wrap and squeeze well. Grind the almond petals lightly, but not into flour, they should be felt.
  3. Combine cauliflower crumbs with egg, grated Parmesan cheese, almond petals, minced garlic, Italian herbs, salt and pepper. Knead well so that the mass can be shaped like a dough.
  4. Place the mixture on a piece of baking paper (cut to fit the baking sheet). Flatten with your hands in a 20 cm circle. Flatten with a rolling pin.
  5. Carefully transfer the resulting blank along with the paper to a preheated baking sheet. Bake for 20-22 minutes, until the base is firm and well browned.
  6. Remove from oven and sprinkle with grated mozzarella (save about a fifth of grated mozzarella for later). Grease the blank with tomato sauce (it is convenient to distribute the sauce over the cheese with the back of a spoon) and sprinkle with the remaining mozzarella.
  7. Return the pizza to the oven for 5-7 minutes, the cheese should bubble and the edges should be crispy.
  8. Remove pizza from oven, sprinkle with basil leaves and paprika. Cut into 6-8 pieces and serve immediately.
