Polish Pike Perch

A classic Polish pairing for pike perch is boiled young potatoes.

  1. Scale the skin of the pike perch, rub the fish on all sides with salt and pepper, and let it sit while the rest is cooking.
  2. Boil eggs hard-boiled, cool in cold water, peel. Coarsely chop the whites and half of the yolks. Chop the dill very finely.
  3. Melt half the butter over low heat, mash with whole yolks and salt. Stir in chopped eggs and dill, salt, and heat a little. Remove from heat, keep sauce warm.
  4. Steam the pike perch at the same time. When it's done, stir in the remaining butter in the sauce and let it melt. Place fish on plates, top with sauce, pepper and serve immediately.
