Whisk into a strong foam and add 2 yolks, mix everything well.
Add sifted flour.
Stir gently with a spatula.
Line a baking sheet with baking paper, be sure to grease it with butter. Place wooden ice cream sticks on a baking sheet, place the dough on the sticks. Raise the sticks slightly so that they turn out in the middle of the Savoyardi (but I think it would be better if you put a little dough, then a stick, and a little more dough on it). Sprinkle the cookies through a strainer with powdered sugar, let the dough rest for 10 minutes.
Preheat oven to 200 degrees. Bake cookies until slightly golden brown, 8-15 minutes. Here's a cookie turned out.
Make strong coffee (I have Tiramisu taste). Cool it down.
Stir the yolk well with 1 tsp. sugar, add 2 tbsp. l. milk and starch. Whisk with a whisk.
Pour the rest of the milk into a saucepan, put on fire and bring to a boil. Reduce the heat, with constant stirring, add the yolk with sugar and starch. Whisk thoroughly with a whisk or spatula, keeping on fire for literally 1 minute, until the mixture becomes viscous. Remove from heat and stir for another 2 minutes. Here's a custard.
Whisk in the cream (should double in size).
Combine cream, curd mass, custard, condensed milk. Whisk well on a high mixer speed.
Dip Savoyardi in coffee. I did this with a cooking brush.
Fill cups (disposable for cold food) halfway with ice cream, then insert cookies with a stick. I have 4 cups of 200 grams.
Fill the ice cream cones completely. Tighten the top with cling film (make a small hole in it for the stick, I did not do this). Place ice cream in the freezer for 4 hours. I left it all night.
Melt the chocolate in a water bath, cool to room temperature.
Remove the glass of ice cream from the freezer, let it stand for 5 minutes, or put it in hot water to make the ice cream easy to remove. Dip ice cream in chocolate. About a miracle! The chocolate freezes instantly! Enjoy your meal!
