Potato and zucchini pancakes

Very tender potato pancakes with zucchini and herbs.

Ingredients

Directions

  1. Drive an egg into mashed potatoes, add ground pepper and flour. Mix.
  2. Peel the zucchini, grate on a fine grater, simmer in vegetable oil until tender.
  3. Chop the parsley.
  4. Add zucchini and parsley to the potatoes.
  5. Heat 1 tbsp. a spoonful of oil. Spread portions of dough with a tablespoon, forming pancakes. Fry zucchini and potato pancakes until golden brown.
  6. Turn over and fry in the same way on the other side.
  7. Zucchini and potato pancakes are ready. Bon Appetit.
