Potato balls in bolognese sauce

Potato gnocchi with minced meat and tomato sauce.

Ingredients

Directions

  1. Pound boiled potatoes with a mortar along with yolk, salt and pepper. Add flour and knead the dough.
  2. Roll out into a tourniquet and cut across. From the resulting balls, roll the balls in our palms. Next, boil the potato balls.
  3. While the balls are boiling, we fry finely chopped onions, carrots, bell peppers, garlic.
  4. After 5 minutes add the minced meat.
  5. After a couple of minutes, pour in the wine, evaporate it and add tomato paste, a little water, Provencal herbs, finely chopped parsley.
  6. Simmer for a minute and add the cooked potato balls, mix. If necessary, you can correct the taste with sugar.
  7. When serving, I sprinkled the potato balls with pecorino romano and herbs.
