  2. Brush 2 baking sheets with olive oil, about 1 teaspoon each. Peel the garlic and rub the baking sheets with it. Place the baking sheets in a hot oven for 5 minutes.
  3. Place the potatoes in a single layer on the baking sheets. Sprinkle with salt and pepper. Return the baking sheets to the oven and bake the potatoes for 7-10 minutes. Then turn the slices over and cook for another 10-15 minutes, until the chips are completely golden brown. Turn over again and bake for another 5 minutes. Transfer to paper towels. Prepare leftover chips as well.
  4. For the dip, chop the parsley into small pieces. Peel the garlic and rub with a pinch of salt into a paste. Beat the curd with an electric mixer, add the cheese and pour in the milk, salt and pepper. Stir in herbs and garlic.
  5. Serve the chips warm or completely cooled with a curd dip.
