Classic potato pancakes are prepared from grated or crushed raw potatoes with the addition of eggs, salt and flour to bind the dough. For flavor, you can add onions or garlic and freshly ground black pepper. They are traditionally served with sour cream or butter.

  1. For classic potato pancakes, peel the potatoes, place them in a bowl of cold water. The potatoes should be in the water so they don't darken.
  2. Coarsely grate the potatoes. In the meantime, put the skillet on the fire to warm it up well. Better to use a thick-bottomed pan that keeps warm well.
  3. Squeeze the grated potatoes well from the liquid, mix with the egg, salt, freshly ground black pepper and flour. Mix everything well until combined.
  4. Fry potato pancakes in vegetable oil and a well-heated skillet until golden brown. Serve immediately with sour cream or any other sauce you like.
