Potato pancakes with zucchini and herbs

A fun way to make a delicious breakfast from yesterday's puree.

Ingredients

  1. Drive eggs into mashed potatoes, mix.
  2. Peel the zucchini, grate on a fine grater.
  3. Add to puree, mix.
  4. Chop the greens.
  5. Add herbs, salt, pepper and herbs to the puree.
  6. Add flour. Mix.
  7. Heat 1 tbsp in a frying pan. a spoonful of vegetable oil. Spread the pancakes. Fry them over medium heat for 2-3 minutes (until golden brown).
  8. Then turn over and fry on the other side for another 2 minutes.
  9. Bon Appetit!
