This hearty and flavorful potato salad with olives and red onions can be a great side dish, as well as a standalone vegetable dish for dinner.

  1. Potatoes for salad must be boiled in their uniform until soft (in salted water, over low heat, 20-25 minutes) and cooled slightly.
  2. First you need to pickle the onions. To do this, cut the onion into thin half rings, sprinkle with sugar and salt, add vinegar, mix and leave for 15-20 minutes.
  3. Cut the olives into rings.
  4. Prepare a potato salad dressing. Combine parsley, chopped garlic and olive oil.
  5. Beat the oil with herbs and garlic using a blender until smooth.
  6. Peel the boiled potatoes and cut into medium pieces. Pour the cooked dressing over the potatoes and leave to soak for 5-7 minutes.
  7. Add onions and olives to the potatoes.
  8. Gently mix the potato salad with olives and onions. Season with salt and pepper if necessary.
  9. A salad of potatoes, olives and red onions is ready.
