Potato salad with onion and bacon

Delicious and satisfying potato salad with bacon and three types of onions. Pickled red onions, fried onions, and green onions are used for the salad.

  1. Wash the potatoes, put in a saucepan, pour 1 liter of water and cook until cooked, about 30 minutes. Drain the water from the finished potatoes and let the potatoes cool slightly.
  2. Cut the red onion into half rings. Put the onion in a bowl, add lemon juice and sugar, pour in 100 ml of boiling water. Leave the onion to marinate for 20 minutes.
  3. Prepare a salad dressing. To do this, mix sour cream, mayonnaise and mustard in a bowl.
  4. Add lemon juice, salt and pepper to taste. Stir all the ingredients of the dressing.
  5. Peel the boiled potatoes and cut into cubes.
  6. Put the potatoes in a bowl, add the dressing to the potatoes.
  7. Cut white onions into cubes.
  8. Heat olive oil in a frying pan and fry the onion until soft, 3-4 minutes.
  9. Add the sautéed onions to the bowl with the potatoes. Stir the potatoes with the fried onions.
  10. Fry strips of bacon in a pan for 3-4 minutes on each side until crisp. Place the bacon strips on a paper towel to absorb all the fat.
  11. Place the potato salad on a serving plate, sprinkle with finely chopped green onions.
  12. Drain the marinade from the pickled onions and place the red onions on top of the potato salad.
  13. Cut the cooled bacon into small strips and put on the potato and onion salad.
  14. Potato salad with onions and bacon is ready.
