Potato soup with turkey, olives and green onions

Soup of tender turkey meat with lots of potatoes and a very aromatic dressing of vegetables and tomato paste. Olives add an interesting sourness to the soup.

  1. We wash the turkey meat, send it to a saucepan and pour 2.5 liters of cold water. Bring the water to a boil, remove the foam and cook the broth over a minimum heat for 60 minutes.
  2. After an hour, add the peeled whole onion (the smaller one) and simmer for another 30 minutes. Take out the onion and meat from the finished broth. Cool the meat. Leave the broth on fire
  3. Peel the potatoes and cut into medium pieces.
  4. Add potatoes to the broth, bring to a boil and cook over low heat for 20 minutes.
  5. While the potatoes are boiling, peel the carrots and onions. Cut the carrots and onions into small cubes. Chop the green onion.
  6. Peel and grind the garlic.
  7. Put carrots, onions and green onions in a cold frying pan. Pour in vegetable oil and put on fire. Warm up a little over high heat, reduce heat and simmer for 3-4 minutes.
  8. Add garlic to fried vegetables and simmer for 1 minute.
  9. Add tomato paste and black pepper. Stir and simmer for another 1-2 minutes.
  10. Disassemble the cooled turkey meat into fibers.
  11. Add the meat to the soup 20 minutes after the start of cooking the potatoes. Salt
  12. We also send the contents of the pan to the pan.
  13. Cut olives into rings.
  14. Add olives to soup, bring to a boil, reduce heat and cook for 15 minutes.
  15. A delicious lunch is ready!
