Pumpkin soup with apple and curry

Ingredients

  1. Heat the butter and olive oil, place the onion and curry powder in a large saucepan, and simmer, uncovered, for 15-20 minutes, until the onions are tender. Stir occasionally. Peel the pumpkin, cut in half and remove the seeds. Cut into large pieces. Peel the apples, remove the seeds and chop coarsely.
  2. Add pumpkin, apples, salt, pepper and 2 tbsp. water. Bring to a boil, cover and simmer for 30-40 minutes, until pumpkin and apples soften. Pass the soup through a coarse grinder or purée in a food processor. Pour the soup back into the pot. Add apple cider or juice. Add water if necessary to achieve the consistency you like. The soup should be slightly sweet and thick enough. Taste with salt and pepper and serve hot. White wine is like this dish.
