  1. Cut the rabbit into 8 portions. Rub each piece with salt and pepper, brush with about half of the olive oil and place in a deep baking dish. Place the dish in an oven preheated to 200 ° C under the switched on grill so that a golden crust forms on all sides, turn the pieces of rabbit once. Then take out the baking dish, turn off the grill setting and turn on the convection or top + bottom setting. Reduce the oven temperature to 170 ° C.
  2. Pour 1 cup hot water into the bunny dish, add lemon juice and zest, bay leaves, black and allspice, cloves, rosemary and cumin. Cover or tighten with foil and return to oven until rabbit is tender, about 1.5 hours. Turn the pieces occasionally. If the lid is not closed tightly and the liquid evaporates, add a little hot water.
  3. Peel and chop the celery, carrots and onions. Cut the peppers into 4 parts, remove the core. Heat the remaining olive oil in a different baking dish, add the vegetables and stir. Season with salt and pepper, pour in a little water, cover the dish with foil or a lid and also place in the oven for about 40 minutes. The vegetables should be soft.
  4. Add vegetables to the bunny dish, stir and leave in the oven uncovered for another 10 minutes.
  5. Finely chop the parsley and peeled garlic, add to the rabbit with vegetables and stir. Serve hot.
