Red mullet meat is tender and juicy - both boiled and fried. Red mullet goes on sale fresh, frozen or canned in oil; hot smoked red mullet is also good

Ingredients

  1. Clean the fish from scales and entrails. Rinse with water and pat dry with paper towels. Make 2-3 slant cuts on the sides. Season with salt, pepper and brush with olive oil.
  2. Chop the onion and garlic. Fry with olive oil until soft, 5 minutes. Add nuts, dried basil, and finely chopped parsley. Stuff the fish.
  3. Fry in a hot grill pan, 3-4 minutes each. from each side.
  4. Cut the tomatoes into 1 cm thick circles, drizzle with oil. Fry, 1 minute each. from each side. Season and serve with the fish and baked vegetables.
