It is not necessary to use baking powder and vanillin of this particular brand, you can replace them with any other similar product. Mix all loose ingredients well.
  2. For rice cookies, you need 100 g of cottage cheese. You can choose a fermented milk product of any fat content, but it must be chopped. To do this, you can use a blender or grind the cottage cheese through a sieve. If you use a blender to grind the curd, then immediately add 60 g of butter, which should be at room temperature. Grind everything to a homogeneous curd gruel.
  3. Add the previously prepared dry ingredients to the resulting pasty curd mass. Using a silicone spatula, mix everything thoroughly. You should get a mass that resembles shortbread dough in structure.
  4. When the mass becomes homogeneous, but rather loose, the dough must be continued to knead with your hands right in the bowl. The dough should come out soft and tender, while it's okay if there are cracks on it. There is no need to leave the dough for proofing or refrigerate for several hours. You can make cookies from it immediately.
  5. From the dough, pinch off a small piece of dough weighing about 20 g and roll out a ball in your hands. We spread it on a baking sheet covered with parchment paper. Similarly, we form cookie blanks from the remaining dough.
  6. When all the blanks are done and laid out on a baking sheet, heat the oven to 190 degrees and set the cookies to bake. A quarter of an hour is enough for the cookies to cook through. It does not need to be kept in the oven for a long time until a golden crust forms on top. Determine the readiness of the cookies by the baked bottom.
  7. After 15 minutes, the cookies can be removed from the oven and allowed to cool slightly at room temperature. Rice cookies are very tender, soft and with a pleasant curd flavor.
