Rice for rolls and sushi

  1. Rice (1 cup), kluglozerny, rinse four times.
  2. Pour 1.5 cups of water into a thick-walled dish with a lid. Bring water to a boil and add washed rice. Bring to a boil and reduce heat. Cover and simmer for 15 minutes.
  3. After boiling for 15 minutes, turn off the heat and leave the rice to rise, covered for another 15 minutes.
  4. Pour 21 grams of rice vinegar into a container and add 21 grams of sugar there, salt to taste, 1-2 grams of salt will be enough. Stir until sugar is completely dissolved. You can heat the dressing over low heat, stirring constantly and not boiling, to speed up the process.
  5. Pour the dressing into the rice and stir with a spatula.
  6. Let the rice steep and cool for another 15-30 minutes.
