  1. Chop the onion finely and heat the broth. Turn the oven to 200 degrees.
  2. Heat the olive oil in a large, thick-walled, refractory saucepan, add the onions and cook, stirring occasionally, for 6-8 minutes. Stir in sherry and rice, then pour in boiling broth and salt.
  3. Close the pot and place in the oven. Bake for about 20 minutes, until rice is tender. Top with a lump of butter before serving. As soon as it melts, serve immediately, in the same bowl.
