Risotto with Asparagus and Peas

Spring dish based on Italian motives.

  1. Boil 1 liter of vegetable broth. In a saucepan in olive oil, fry the onions, carrots and peas. Add garlic, thyme.
  2. Add rice, mix thoroughly so that the rice is saturated with oil. Pour in the wine, simmer until the wine evaporates. Pour in broth gradually.
  3. Add the asparagus with the penultimate broth.
  4. At the end of cooking add chopped herbs, zest and yoghurt, salt and pepper.
  5. The dish is ready.
  6. Enjoy your meal!
