Risotto with cauliflower and pumpkin

Autumn is the perfect time to taste delicious and varied pumpkin dishes. Experiment with this vegetable and offer your family a variety of dishes from very simple to interesting and unusual.

  1. Cook until semi-finished rice and cauliflower, are disassembled into inflorescences.
  2. In a deep frying pan over medium heat, melt the coconut oil, add the finely chopped onion and fry it until translucent.
  3. In a frying pan add broth, ready rice, chopped in a blender (or fork) cauliflower, pumpkin puree, and season with salt and your favorite spices. Mix well.
  4. Reduce heat and simmer for about 8-10 minutes until the broth evaporates.
  5. Remove from heat and sprinkle with risotto and dried cranberries. You can decorate with bacon and herbs. Bon Appetit!
