Roasted wild duck with potatoes

This simple wild duck dish is quick and delicious.

  1. In a small bowl, combine 2 teaspoons of salt and 1/2 teaspoon of ground black pepper
  2. Rinse the duck, dry with paper towels, drizzle with a little olive oil and coat the inside and outside of the duck.
  3. Grate the duck with the prepared salt and pepper mixture. Place a branch of rosemary inside the mouth. Leave to marinate for 30-40 minutes.
  4. While the duck is marinated, peel the potatoes, garlic and wash the tangerine. Cut potatoes in half, if large potatoes can be cut into 3 pieces. Crush a little over half of the head of garlic.
  5. Pull the rosemary out of the duck on a baking sheet, put the potatoes and pour over with olive oil, add some of the crushed garlic to the potatoes, salt and mix everything with your hands. Put three whole cloves of garlic inside the duck and a whole tangerine for flavor.
