This amazing salad will be especially appreciated by seafood lovers! My friend Marinka is going to marry a foreigner, an Italian. To get to know the groom's family, she had to fly to sunny Italy, from where she, along with a lot of rave reviews, brought a culinary recipe for a salad with shrimps, rice and garlic. It is listed in my notebook as "Mediterranean Salad."

  1. Put the chilled shrimps in a metal sieve with a handle and immerse them in boiling water for 1-2 seconds. Now the shrimps need to be peeled and chilled. Rinse the rice several times and boil in salted water until tender. Round it will be rice or elongated - you decide. Make sure that the grains do not boil, keep their beautiful shape. Drain the water and let the rice cool.
  2. The next step: chop the washed green onions and send them to a preheated pan, where we have already added olive oil and a spoonful of butter. Fry green onions with finely chopped garlic and chopped parsley. Three minutes should be enough. A stunning aroma will spread throughout your home! Add shrimps to the pan, and fry the whole mixture for another five minutes.
  3. And now, on a beautiful plate, put first boiled rice, then shrimp, pour everything on top with oil in which the greens were fried.
  4. Decorate with thin lemon slices.
