A recipe from chef Régis Trigel, where all the trendiest ingredients - pak choy, hummus and exotic fruits - make the perfect company for fish.

  1. Boil the bulgur until tender with the addition of saffron. Add butter, salt and pepper.
  2. Grill salmon, bring to readiness in the oven at 180 degrees for 6 minutes.
  3. Grill pak-choy salad separately, pour with olive oil and balsamic sauce and put on bulgur.
  4. For hummus, use a blender to grind the chickpeas with sour cream, garlic, chili, lemon juice, olive oil and salt into a smooth puree.
  5. For the Vierge sauce, remove the skin and seeds from the tomato. Cut all ingredients into small cubes and season with chili sauce and olive oil. Add salt and pepper to taste.
  6. Put hummus on a plate, next to bulgur, salmon, top with exotic sauce. Serve with a lemon wedge and herbs.
