Salmon with vegetables in foil

To get a delicious dinner, you will have to spend no more than 10 minutes, the oven will do the rest. And the dishes will have to be washed at least - serve the fish directly in the foil in which it was cooked.

  1. Preheat oven to 200 ˚C. Prepare 4 sheets of aluminum foil, 35-40 cm long. Cut the zucchini into thin half rings. Chop the garlic
  2. and finely chop one shallot onion, mix with 1 tbsp. l. olive oil and zucchini, add a little salt and pepper. Divide vegetables into 4 pieces and place on foil.
  3. Put salmon fillets on vegetables, season with salt, sprinkle with lemon juice and brush with olive oil.
  4. Dice the tomatoes and leftover shallots, add oregano and 1 tbsp. l. olive oil, salt and pepper. Place the tomatoes on top of the fish and seal the envelopes. Transfer the envelopes to a baking sheet and place in the oven for 20-25 minutes. Serve wrapped in foil.
