  1. Make a dough for the apricot shortbread. Cut the butter into small cubes, place in a deep bowl and leave at room temperature for 30 minutes.
  2. Heat the oven to 180 ° C. Grease a baking tray for shortbread with apricots with a little butter and sprinkle with semolina. Shake off the excess.
  3. Beat soft butter with a mixer with 200 g of sugar until a fluffy mass of a homogeneous consistency is obtained. Then add eggs one at a time, beating well after each.
  4. Sift flour with starch and salt into the resulting mass through a fine sieve. Knead the shortbread dough quickly. Place it on a prepared baking sheet and smooth it out with your hands soaked in cold water.
  5. For the filling, wash and dry the apricots. Cut each in half and remove the pit. Put the prepared apricots, slices up, on the shortcrust pastry, pressing slightly. Sprinkle with sugar.
  6. Bake a shortcrust cake with apricots for 20-25 minutes. Then remove from the oven and let cool slightly. Transfer the apricot pie to the wire rack. Let cool until slightly warm and serve.
