Sausages with Wine and Onion Sauce

Good grilled sausages are a pleasure in themselves. And with such a great sauce, and even like in childhood, with mashed potatoes ... Well, yes, well, yes, not a very healthy combination and not at all dietary. But a couple of times a year, in between steamed fish and grilled vegetables, you definitely can!

  1. Cut the onion into thin half rings. Remove stems from fresh thyme (you won't need them here).
  2. For the sauce, melt the butter in a frying pan, put the onion, fry over low heat, stirring occasionally, until soft, not allowing the color to change, 15 minutes.
  3. Pour in wine and vinegar, season with thyme, salt and pepper to taste, add sugar. Stir, bring to a boil, reduce heat to medium-high and cook until sauce thickens slightly, about 10 minutes.
  4. While the sauce is cooking, grill the sausages on a buttered wire rack until crisp, turning frequently for about 15 minutes, and serve with the sauce and mashed potatoes
