Smoked Salmon Appetizer

If you spread Riga bread with curd cheese and add a thin slice of smoked salmon, you will get an excellent, hearty and delicious sandwich. We went a little further, complicating the spreading and making small canapes out of the sandwich, which are so wonderful to serve on the buffet table.

  1. Trim the edges of the bread so that you get rectangles.
  2. Thinly chop the onion, mix with cheese, zest and lemon juice, salt and pepper. Set aside 1 tbsp. l. mixtures.
  3. Smear each piece with a creamy mixture, place the salmon pieces on top, level with the pieces of bread. Fold the pieces of bread one on top of the other, grease the top with the remaining cheese mixture. Refrigerate for 1 hour. Cut into 3 x 3 cm pieces.
