A variant of a gourmet homemade dish that can be served to guests. Spaghetti goes well with a delicate sauce in which the creamy taste of cheese and cream harmoniously intertwines, complementing the barely pronounced nutty notes of avocado. We serve spaghetti to the table, sprinkled with chopped pieces of crispy ruddy bacon - it's very tasty!

  2. Separate the yolk from the protein.
  3. Any hard cheese will do, as long as it melts well.
  4. Use cream with a fat content of 10-20%.
  5. Cut the bacon into thin slices and place in a preheated dry frying pan. Fry on both sides over moderate heat until golden brown. This will take approximately 10-15 minutes.
  6. Place the fried bacon on a paper towel to absorb excess oil.
  7. Drop spaghetti into boiling salted water. Bring to a boil again. Cook until tender, 8-10 minutes (or according to package directions).
  8. Drain the spaghetti in a colander and leave for a while to let the water glass.
  9. In the meantime, rinse the avocado well and pat dry. Cut in half and remove the pit. Scoop out the pulp with a spoon and send it to a blender bowl or a deep bowl.
  10. Grate hard cheese on a fine grater. Add to avocado.
  11. There is also the yolk and peeled garlic. Grind the ingredients with a blender until smooth.
  12. Pour in the cream a little at a time so that after whipping you get a mass of the consistency of liquid sour cream. Season to taste with salt and ground black pepper.
  13. Mix the sauce well again.
  14. Heat vegetable oil in a frying pan. (You can use bacon fat if you like.) Put the spaghetti in a skillet and heat for 1-2 minutes over moderate heat.
  15. Add the prepared sauce to the spaghetti.
  16. Stir. Heat for another 2-3 minutes, stirring until the sauce thickens and coats the spaghetti.
