Spanish spicy potatoes

Spanish-style fried potatoes are a great appetizer or side dish. This dish, with garlic, tomatoes and hot peppers, can be cooked on the stove top. However, when you finish cooking in the oven, you will end up with richer flavored potatoes.

  1. Preheat oven to 200 degrees. Cut the peeled potatoes into 2 cm pieces. Finely chop the onion and garlic.
  2. Heat half of the oil in a non-stick skillet. Add the potatoes and cook over moderate heat, stirring frequently, for 20 minutes, until the potatoes begin to brown. Add the onion and cook for another 5 minutes.
  3. Add hot pepper, wine, finely grated zest and garlic. After 2 minutes, add the tomatoes along with the juice and the chopped parsley. Season with salt and pepper and cook, stirring occasionally, for 10 minutes.
  4. Add the remaining butter, transfer to a shallow dish and place in the oven for 30 minutes. Serve hot potatoes with green salad.
