Spicy Pizza with Carrot Puree and Suluguni

Pizza with carrot puree and suluguni is definitely not for children. The fact is that the puree contains an unusual ingredient - white wine. But if you want to please the whole family, young and old, with such a pizza, replace the wine with half a glass of orange juice and enjoy it all together.

  1. Finely chop the onion for the carrot puree. Peel the carrots and small cubes or grate on a coarse grater.
  2. Heat 1 tablespoon in a saucepan. vegetable oil and fry the onion until transparent, 2 minutes. Add carrots and stir-fry for 5 minutes.
  3. Pour in the wine and, continuing to stir the vegetables, let the wine evaporate to half the volume. Salt, add 1 glass of water. While stirring, continue to cook over medium heat for about 15 minutes, the carrots should be very soft. Cool and transfer to a blender. Add mascarpone, cayenne pepper, and ¼ cup water to the carrots. Grind in mashed potatoes.
  4. Combine flour, sugar, salt and yeast in a deep bowl. Pour butter into a bowl and then add warm water to knead the dough. Leave it to rise for an hour.
  5. Place 2 baking sheets in the oven. Preheat the oven to 250C.
  6. Sprinkle the work surface with flour. Divide the dough in half and roll both sides into a ball. Roll out the dough into a layer and with your hands pull it into an oval 15x25 cm.
  7. Remove the preheated baking sheets from the oven, brush them with olive oil. Gently transfer the dough to baking sheets and brush with olive oil too. Return the baking sheets to the oven and bake the tortillas for 5 minutes.
  8. Remove the dough from the oven, spread the carrot puree over it, then add the grated cheese and red onion cut into thin half rings in an even layer. Return the pizzas to the oven by swapping the trays. Leave it on for 10-12 minutes until the cheese melts and begins to bubble.
  9. Remove the pizzas from the oven and let cool for 2 minutes. Sprinkle with arugula and serve.
