Spinach Porridge

Of course, if fresh spinach is not available, fresh frozen can be used. But why?! Also, this porridge can be made from any leafy vegetables.

  1. Slice the spinach thinly.
  2. Heat oil in a saucepan, add flour and cook, stirring vigorously, for 1 minute. Add spinach, mix thoroughly, cook for another 1 minute. Pour in 1/2 cup of water, add salt and bring to a boil. Reduce heat and cook for 5 minutes.
  3. Chop the parsley. Beat the egg with a whisk with yogurt, add parsley. Pour, stirring constantly, the resulting mixture into the spinach. Bring to a boil and immediately remove from heat.
  4. Grate cheese. Arrange the porridge on plates, sprinkle with grated cheese.
