A simple recipe for a cozy homemade dinner is stewed vegetables with sausages and tomato paste. The stew turns out to be hearty, rich in taste and color, and thanks to sweet pepper, garlic and dill, it is very aromatic.

  1. Prepare your ingredients. Peel potatoes, onions, carrots, bell peppers and garlic. Rinse vegetables and herbs.
  2. Free the sausages from the shell.
  3. Cut onions, bell peppers and carrots into small cubes.
  4. Heat vegetable oil in a skillet. Put the onion in hot oil and fry until transparent, 3-4 minutes.
  5. Add carrots and bell peppers to the onion, fry for another 4-5 minutes, until the carrots are soft.
  6. Cut the potatoes into small cubes.
  7. Cut the sausages into thick slices. Chop the garlic with a press or fine grater.
  8. Send the potatoes to the pan to the fried vegetables, stir.
  9. Add black pepper, hot red pepper, salt, thyme and garlic to the pan (adjust the amount of garlic, salt and ground pepper to your liking).
  10. Dissolve the tomato paste in 200 ml of drinking water and pour into the pan. Cover and simmer over low heat until potatoes are tender, about 20 minutes.
  11. Put sausages with vegetables, stir, cover and simmer for 5 minutes.
  12. Finely chop the dill and add to the pan with the vegetables and sausages, stir, cover and remove from the heat.
  13. Arrange the stew with potatoes, bell peppers and sausages on plates, garnish with fresh herbs of basil, dill or parsley if desired. Dinner is ready, invite everyone to the table!
  14. It would seem that it’s just potatoes with sausages, but it’s delicious so that you cannot drag by the ears.) Children especially like this dish!
