Of all the European cuisines, my favorite is Italian. With the exception of olives, I adore almost everything in it. I present to you the southern Italian dish Totani e patate, a stew of potatoes with squid, parsley and tomatoes. Squids with this method do not come out rubber!

  1. In a large saucepan, heat the olive oil, add chopped garlic, chili, half a serving of chopped parsley and simmer for 2-3 minutes. Defrost the squids (if you don't have fillets, you need to peel them), cut into rings.
  2. Transfer the squid to a saucepan with garlic and simmer for 4 minutes. Pour in the wine. Bring to a boil, add chopped tomato pulp, small cubed potatoes. Season with pepper, salt and oregano.
  3. Reduce heat, cover and simmer for 30-35 minutes, stirring occasionally.
  4. Sprinkle with parsley when serving.
