One has only to breathe in this divine smell of freshly ground coffee with spicy sweet cardamom - and you are immediately transported somewhere to warm lands, where swarthy girls dance their talking dances a stone's throw from the sea-ocean. And nothing needs to be done, because vacation ... If you have a need to go to bed very late, then it is best to drink just such coffee - and at exactly 5 o'clock in the afternoon. Unlike the Arabs, who drink their qahwa al-arabiya from tiny cups, we need larger portions.

  1. Fry the cardamom pods in a dry preheated skillet over medium heat, shaking, 1-2 minutes. Then open them and take out the seeds. The boxes themselves are no longer needed.
  2. Put the seeds along with the coffee beans in a coffee grinder and grind as small as possible, literally into dust. If the grinder allows it, add sugar when grinding.
  3. Pour bottled water into a 300 ml Turk (cezve), add salt, sugar (if you did not grind it with coffee) and ground coffee with cardamom. Don't stir!
  4. Put the Turk on the lowest possible fire. The first 5 minutes. do not touch, then start stirring without lowering the spoon to the bottom. The longer the coffee is brewed, the tastier it will be. While it is cooking, heat the cups by pouring half of the boiling water into them. After 2-5 minutes. Pour boiling water, wipe the cups dry.
  5. When the coffee is about to boil, spread some of the light brown foam over the cups. When the head of foam starts to rise, preventing the coffee from boiling, remove the turkey from the heat and immediately pour the coffee into the cups. Serve immediately
