Tarator is a great alternative to okroshka and beetroot. Preparing quickly and not at all difficult. Despite the small amount of ingredients, the soup is light but filling and is perfect for those who are looking for weight.

  1. Peel the cucumbers and cut into small cubes. If the cucumbers are larger, then 2-3 pieces are required.
  2. Chop the garlic and dill.
  3. In a bowl, mix cucumbers, herbs and garlic, season with salt and pepper and leave for 10 minutes.
  4. Chop walnuts: roll with a rolling pin or simply chop with a knife.
  5. In a bowl, combine cucumbers, dill, nuts and natural yogurt. If the soup is too thick, you can add a little soda or plain water.
  6. That's all - a delicious hearty summer soup is ready! Drizzle with a little olive oil and sprinkle with walnuts before serving.
