This recipe is unusual in that it doesn't contain a single egg. The scrambled eggs taste very similar to the real one. This egg-free dish will appeal not only to vegetarians, but also fasting people and vegans alike. This is a very simple and tasty dish, you can think of a lot of variations.

  1. Cut into equal medium cubes 3-4 champignons, 1 onion, 1 fleshy tomato and 2-3 small cauliflower florets.
  2. Heat 1-2 tbsp in a skillet over medium heat. l. olive oil. Add the onion and cook for 2-3 minutes. Add the rest of the vegetables.
  3. Crush 400 g of hard tofu with your hands. Season with 0.5 tsp. turmeric. Stir.
  4. Add tofu to onions. If the tofu produces a lot of liquid, turn the heat up and, while stirring, evaporate most of the liquid. Add 1 tbsp. l. soy sauce and freshly ground black pepper. Cook, stirring occasionally, until the vegetables are cooked through. 1-2 minutes. until the end of cooking add 30-40 g green peas. Sprinkle the fried eggs with finely chopped cilantro and serve hot with wheat bread or corn tortillas.
