Korma (accent on the first syllable) is a type of curry. In Pakistan, Bangladesh and North India, it is a national dish. The obligatory ingredients of curry are yogurt, cumin, coriander, ginger and chili pepper are added for pungency.

  1. Cut the onion into half rings or small pieces, finely chop the garlic and chili, after removing the seeds. Peel the tomatoes and cut into slices. Peel the seeds from the bell pepper and also cut, chop the peeled potatoes coarsely enough.
  2. Heat oil in a large skillet, add onion and garlic, stir fry for 3 minutes, add ginger, chili and leave for 4 minutes.
  3. Put potatoes, tomatoes, bell peppers, cauliflower to the onion, add all the spices, salt and pepper to taste. Cook for 3 minutes.
  4. Pour broth or water over vegetables and bring to a boil, then reduce heat and simmer for 25 minutes. Add yogurt and cream and cook, stirring occasionally, for 5 minutes. At the very end, sprinkle the dish with finely chopped cilantro leaves and let them warm up.
  5. Serve with boiled rice.
