Vegetarian rice with tofu

Mixed vegetables preferably with legumes (peas, beans) and corn. It is better to serve so that all the ingredients are visible. There are much more interesting chopsticks.

  1. Boil the rice, covered, for 30 minutes, until all the water has boiled away.
  2. Simmer and lightly fry the frozen vegetable mixture in olive oil. Add salt, garlic, ginger. Postpone.
  3. In the same frying pan, fry the tofu, cut into small pieces, over medium heat, until golden brown. Add quite a bit of olive oil and season with salt.
  4. Return the vegetables to the tofu and warm up. Add pepper, soy sauce and vinegar.
  5. Put the rice in bowls and pour over the soy sauce. Then put the vegetable mixture with tofu on the rice, add olive oil, sauce, cashews and wheat germ.
