Kohlrabi stalk cabbage is a storehouse of useful substances: in addition to mineral salts and a whole set of trace elements, it contains a record amount of vitamin C, for which it is sometimes called northern lemon. And the cilantro and capers in this salad will add a Nordic charm to its Nordic character.

  1. For dressing, pour lemon juice into a cup, add a pinch of salt and pepper, beat with a fork. Then add a little olive oil while whisking. Put the mustard at the very end and mix thoroughly.
  2. Chop the cilantro and onion. If kohlrabi tubers have leaves, cut them off and chop coarsely with a knife (or leave whole if not too large).
  3. Peel the kohlrabi and cut the pulp into slices. Boil them in boiling salted water together with leaves until half cooked for 5-10 minutes. Drain the water, cool the cabbage slightly.
  4. Put the warm kohlrabi with the leaves in a salad bowl, sprinkle with onions and cilantro, pour over the dressing and mix gently. Sprinkle with capers on top and serve the salad warm.
