Warm potato salad is delicious, filling and easy to prepare.

Ingredients

  1. Wash the potatoes and cut into pieces. If the potatoes are small, then you do not need to cut them at all.
  2. Place the potatoes in a large saucepan, add water, bring to a boil, cook over medium heat, with the lid open, until tender, about 25 minutes. The potatoes should be soft enough, but never boiled.
  3. Drain the water from the potatoes, let the potatoes cool slightly. Cut the potatoes into medium sized pieces.
  4. In a separate bowl, combine lemon juice, olive oil, mustard, salt and pepper.
  5. Put still warm potatoes in a bowl with dressing and mix well. Leave the potatoes for 10 minutes at room temperature.
  6. Chop green onions, add to potatoes. Additionally, you can add finely chopped pickled cucumbers, herbs, etc. and stir the salad again.
  7. Taste, add salt, pepper, lemon juice to the potato salad, if necessary. Warm potato salad is ready. It keeps well in the refrigerator in an airtight container, up to 1 week. You can take potato salad for a picnic. Bon Appetit!
